Power Muffins

“This recipe came to me from one of my voice students, Amanda Speare. They are “Power” muffins because they don’t contain any flour or sugar but they are super yummy!”

Ingredients:

  • 1 cup quick rolled (instant) oats
  • 1 cup sour milk* (can substitute nonfat plain yogurt)
  • ½ c applesauce
  • 1 cup oat flour (if you don’t have oat flower, easily put instant oats in a blender or food processor and grind to powder)
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • ½ tsp. cinnamon
  • 3/4 cup brown sugar
  • 1 egg beaten
  • 1 tsp. vanilla
  • 1/4 cup melted butter (can sub canola oil)

Suggested add ins:

  • ½ c flax seeds
  • 1 whole mashed banana (My Favorite!)
  • 1 c blueberries or raspberries
  • ¼ almonds (My Favorite!)
  • ¼ c dried Apricots
  • a handful of chocolate chips (a must! My favorite!)

Instructions:

Preheat oven to 350°.  Grease (12-muffin) muffin tin or put muffin liners in tin.  Whisk together the sour milk, applesauce, butter, vanilla, egg, (banana), and brown sugar until smooth.  Stir together oat flower, baking soda, and cinnamon; add to wet mixture.  Fold in oats and any add ins.  Fill muffin tins to the top as muffins will not rise much.  Bake for 20-25 min or until toothpick inserted in center comes out clean.  Store in Tupperware (if needed) once they have cooled.

*To sour milk, add 2 TBLSP vinegar or lemon juice** to 1 cup of milk. Let stand a few minutes.
