Tomato Soup Cake

Ingredients:

Cake:

  • 1 Tbs. shortening
  • 1 cup sugar
  • 1 egg
  • 1 can tomato soup
  • 1 tsp. baking soda
  • 1 ½ cups flour
  • 1 tsp. cinnamon
  • ½ tsp. cloves
  • ½ cup walnuts
  • ½ cup raisins

Icing:

  • Confectioners’ sugar
  • Small cake of cream cheese
  • Orange juice
  • Vanilla
  • 1 Tbs. butter

Instructions:

  • Preheat oven to 350
  • Lightly grease 2 round cake pans
  • Cream shortening and sugar
  • Add egg and beat
  • Dissolve baking soda in tomato soup can
  • Add tomato soup to shortening, sugar and egg mixture
  • Mix walnuts and raisins with a little flower and add to the above
  • Add flour and spices and mix well
  • Bake at 350 for 20-25 minutes
  • Cool completely and add icing
